Clam Chowder

1 lb. bacon
1 onion, lg.
6 potatoes, lg.
2-3 c. milk, add to desired color
1 lg. can clams
1 stalk celery
Salt & pepper

Brown bacon in frying pan, add onion, chopped. Pour off grease. In a large pot add potatoes, cubed and cover with water. Pour in the juice from can of clams. (If you wish you may add extra clam juice at this time.) Next add in chopped celery, salt and pepper to taste, and the bacon onion mixture in frying pan. Cook, covered at this time on a low fire, as you do not want to break up your potatoes. Cook until potatoes are done. Add milk. Thicken with flour for desired consistency. Add clams, do not cook, it is ready to serve. Serves 12. Optional: May add in mushrooms when potatoes are done. Cream may replace milk.
