Oyster and Artichoke Soup 4 Tbsp. butter
Melt the butter in a skillet and saute the onions until clear. Add flour and brown lightly. Add celery and cook until tender. Add green onions and garlic, cooking until tender. Slowly add 4 cups of water to the desired thickness and simmer 5 to 10 minutes. Add artichokes and liquid and simmer 15 minutes. Add Oysters and liquid, simmering 10 minutes more. Salt and pepper to taste.
