Chilled Prawn and Cucumber Soup

1/2 Cucumber; chopped roughly
100 g Peeled prawns; thawed if frozen (3 1/2oz)
1 450 gram car low-fat natural yogurt; (15oz)
1 ts Lemon juice
1 ts Chopped fresh mint
2 ts Chopped fresh parsley
1 ts Chopped fresh chives
Salt and pepper
Mint sprigs; to garnish

Place the cucumber, prawns, yogurt and lemon juice in a blender or food processor and process until roughly chopped, but not too smooth.

Stir in the herbs and season to taste. Pour into individual dishes and chill thoroughly for about 1 hour. Serve garnished with a sprig of mint each.
