Oyster Stew

3 cups milk
1 pint Oysters
6 Tbsp. melted butter
Flour
Salt & pepper to taste
Chopped parsley

Heat milk in a double boiler. Strain the Oysters from the Oysters and pick small pieces out of the shell. Heat the Oyster liquid slightly and remove the skim which rises to the top. Blend butter and flour until well mixed, then stir into milk until well blended. Add the Oysters and the liquid until the edges of the Oysters begin to curl. Season to taste with salt and pepper. Parsley may be sprinkled over top when ready to serve.
