Golden Fried Oysters

1 pint fresh Oysters
2 eggs, beaten
2 Tbsp. milk
1 tsp. seasoned salt or table salt
1/8 tsp. pepper
1 cup fine cracker crumbs

Drain Oysters. Combine egg, milk and seasoning. Dip Oysters in egg mixture and roll them in cracker crumbs. Repeat process to form double breading.

Deep Fat Fried: Fry in oil, hot but not smoking (375 F), until golden brown. Total frying time 2 to 3 minutes. Drain on absorbent paper.

Pan Fried: Fry in 1/2 inch of oil, hot but not smoking, until bottom side is golden, then turn and fry other side until golden brown.
