Eastern Shore Oyster corn Fritters

1 pint Oysters, drained
3/4 cup liquid
1 egg, just add
2 cups biscuit mix
1/4 tsp. seafood seasoning
1/8 tsp. salt
1/8 tsp. pepper
8 oz. can whole kernel corn

In large bowl beat egg. Add biscuit mix, seasonings, corn (drained well), Oysters and 3/4 cup liquid from Oysters. Stir well.

Heat 1-2 inches of oil in large fry pan and drop batter into oil by tablespoon. Cook until brown on one side; turn; brown other side.

Yields 20 servings
