Oyster Stew

2-4 Tbsp. butter
1 tsp. grated fresh onion
1/2 cup sliced thin celery
1 to 1 1/2 pints Oysters with liquid
1 1/2-2 cups milk
1/2 tsp. salt
1/8 tsp. white pepper
2 Tbsp. chopped parsley

Use double boiler. Do not let top pot sit in the water. Place top over boiling water, saute first 3 ingredients. Place pan over boiling water and add Oysters, milk, salt and pepper. When the milk is hot and the Oyster FLOAT add parsley. Do not over cook.
