Citrus Marinated New Zealand Green Mussels

9 New Zealand Green-Lipped Mussels
1/4 small onion, finely chopped
1 tsp. fresh rosemary or parsley, finely chopped
1/4 cup lemon or lime juice
1/4 cup white vinegar
Salt and pepper to taste

Mix all ingredients together and refrigerator overnight in non-aluminum container. Drain before serving.

Serves 3 as appetizer.
