Baked Stuffed Scallops

2 lbs. Scallops
1 stick margarine
1 medium onion, chopped
1 tsp. minced garlic
3 to 4 shakes of parsley
1/2 cup cooking sherry
1 to 2 tsp. crushed pepper
Bread crumbs, plain or seasoned

In skillet, melt margarine. Add onion and minced garlic. Simmer until onions are clear. Add pepper and parsley and simmer for a few minutes. Add cooking sherry and simmer 10 to 15 minutes.

Place in square casserole. Pour onion mixture over Scallops. You should have enough to cover Scallops. If not, melt more margarine and add. Cover top very generously with crumbs and bake uncovered at 400 F for 30 minutes. May brown top by putting under broiler for a few minutes.
