Canadian Lobster Pie 2 cups chopped Lobster
Saute Lobster in 1/4 cup melted butter until heated through. Melt 6 tablespoons butter in saucepan; stir in flour until smooth. Add cream, salt and pepper; cook, stirring constantly, until smooth and thickened. Stir small amount hot mixture into egg yolks, then stir back into sauce. Add Lobster; turn into casserole. Cover with pie crust. Bake at 375 F until crust is browned.
