Lobster Bisque 3 Tbsp. butter
Melt butter in large soup pot. Add carrots, scallions, and Lobster; saute lightly. Add uncooked rice, herbs, seasonings, tomatoes, and water. Simmer, uncovered, for 40 minutes.
Remove the bay leaf and parsley. Next, puree the mixture through a strainer/food mill or easy on blender. Return to pot; add half & half or skim milk and cook over low heat just until heated through. Do not boil.
