Baked Scallops

1 lb. fresh Scallops
1 large green pepper
1 large onion
1/2 lb. mushrooms
1 cup dry wine or vermouth
Flour
1 clove garlic
1 bay leaf
1/4 tsp. thyme
1 cup Swiss cheese
Margarine as needed

Wash Scallops and dry. Salt and pepper, then roll in flour. Set aside. Chop green pepper and onion into large pieces. Slice mushrooms. Saute vegetables with one clove chopped garlic in margarine. Set aside. Brown Scallops in margarine for a few minutes. Add a little more flour and stir. Add onion and green pepper, mix and add wine or vermouth. Add one bay leaf and a touch of thyme. Cook a few minutes. Put in shallow casserole, top with grated Swiss cheese and dot with margarine. Bake at 350 degrees F for 15 minutes, then broil 2-3 minutes until cheese starts to brown. Serve with rice or potatoes, vegetable, and crisp bread.
