Baked Scallops 3/4-1 lb. Scallops
Scallops should be fairly uniform in size, if large, cut in half. Combine Scallops, parsley and cracker crumbs. Set aside.
Melt butter in small skillet and saute garlic for 2 minutes until lightly browned. Add garlic butter to Scallop mixture. Season with salt and pepper to taste. Turn mixture into small, shallow casserole. Bake at 350 F for 20-25 minutes or until Scallops are opaque and crumbs are browned. Makes 3 or 5 servings. *May be served with Walnut Pasta. |
